Meet the charming winemaker Eva Clüsserath at the Rutz Zollhaus, listen to stories from the Moselle and enjoy a 5-course menu with a great wine pairing.
The basis for her magnificent wines are the vines, up to 100 years old, which she was able to take over from her parents. The family still plays an important role in the cultivation of the vineyard, as does the exchange with her husband Philipp Wittmann.
However, the class of her wines is based above all on meticulous work in the vineyard and the time Eva gives the wines in the cellar. After a maceration period, the grapes are pressed and fermented spontaneously in the vat. Fermentation may well continue into the following spring. By late summer, the wines are gradually bottled after a single filtration. This slow and natural method of winemaking is the true cultural heritage of the Moselle and produces unmistakable wines with incredible ageing potential.
